Try This Great Side

I found this great side in the Weight Watcher’s Annual Recipes for Success 2006 Cookbook. It is so terrifically simple and tasty. Try it next time you are grilling.

Grilled Asparagus with Balsamic Vinaigrette

2 pounds of asparagus spears
Cooking spray
2 Tbsp. Balsamic Vinegar
1 Tbsp. Extra Virgin Olive Oil
½ tsp. Kosher Salt
½ tsp. Freshly ground black Pepper
1/3 cup Parmigiano-Reggiano or Parmesan cheese

Preheat the grill.
Snap off the tough ends of asparagus. Coat asparagus with cooking spray; place on grill rack, and grill for 4 minutes or until crisp-tender, turning frequently. Place the asparagus on a serving platter.
Combine vinegar and oil in a small bowl stir with a whisk. Drizzle over asparagus; sprinkle salt, pepper and cheese on asparagus. Serve immediately!
